Ingredients
  • 4 Greenridge Naturals Beef Sausages (finely chopped)
  • 3 tbsp extra-virgin olive oil
  • 1/3 cup carrot (grated)
  • 1/4 cup onion (chopped)
  • 2 tbsp tomato paste
  • 3 garlic cloves (minced)
  • 1/4 cup red wine
  • salt and pepper (to taste)
  • 1 can crushed tomatoes (28oz)
  • 8 oz pappardelle pasta
  • 3 tbsp basil (minced)
  • 1/4 cup parsley (minced)
  • Parmesan cheese (for garnish)
Instructions

    Cook pasta according to package.

    In a large pot on high heat, add extra-virgin olive oil. Add carrot and onion and cook for 1 minute. Add sausage and cook until golden brown and heated through.

    Add the tomato paste and garlic to the large pot. Pour in the wine and simmer for 2 minutes.

    Stir in the crushed tomatoes and cook for 10min or until the sauce has thickened.

    Combine the basil, parsley and pasta to the large pot, season with salt and pepper.
