Cucumber Turkey Roll-Ups

- 6 oz Greenridge Naturals Turkey (shredded)
- 3 medium sized cucumbers (thinly sliced lengthwise)
- 1/4 cup basil pesto
- 6 slices Greenridge Naturals Mozzarella Cheese (cut in half)
- 1 bell pepper (thinly sliced)
- 1/2 cup spinach (shredded)
- salt and pepper (to taste)
Place the sliced cucumber on a piece of parchment paper and pat the cucumbers dry with a paper towel.
Spread about 1 tsp of pesto over each cucumber slice.
Evenly place the Greenridge Naturals Turkey, Mozzarella Cheese, spinach and bell pepper over each cucumber slice.
Sprinkle the salt and pepper to taste.
Roll each cucumber individually and put a toothpick in each one to hold it in place.
