Chicken Sausage Broccoli Cheddar Soup

Description

There is truly nothing like the classic Broccoli Cheddar Soup made famous by everyone's favorite soup and salad chain. We took it up a notch and added our Chicken Sausage for an extra punch of protein. Still delicious and even more hearty, this Broccoli Cheddar Soup is super easy to make and is perfect if you want to curl up on the couch with a nourishing, and cheesy stew!  So get cooking, because 'tis the season for Soup! 

Ingredients
  • 4 cup broccoli florets
  • 1 small white onion (diced)
  • 1.5 cup shredded carrots
  • 4 cup chicken stalk
  • 1/8 tsp nutmeg
  • salt and pepper to taste
  • 3 tbsp unsalted butter
  • 1/3 cup all purpose flour
  • 1 cup half and half or whole milk
  • 1 package Greenridge Naturals Black Forest Chicken Sausage (sliced)
  • 1 package Greenridge Naturals Mild Cheddar Cheese (chopped)
Instructions
  1. In a crock pot combine broccoli, carrots, onion, chicken stock and seasonings. Cook on low for 3.5 hours.
  2. Stir in the Greenridge chicken sausage and cook in the crock pot another 15-20 minutes on high.
  3. Meanwhile, melt the butter in a non-stick skillet on medium heat. Gradually whisk in the flour. Take about 1 cup of liquid from the crock pot and gradually whisk that into the flour mixture on low heat.
  4.  Slowly whisk in the half and half. Next gradually whisk in the cheese until it’s melted. Add the cheese sauce to the crock pot and store until combined.
