Loaded Ham Egg and Cheese Muffins
Start your day off right with these delicious and easy-to-make Loaded Ham, Egg, and Cheese Muffins. Made with Greenridge Farm Caminito Ham, cage-free farm fresh eggs, chopped spinach, and shredded sharp cheddar cheese, these muffins are a flavor explosion in every bite. The combination of savory ham and cheese with fluffy eggs and fresh spinach creates a perfect balance of salty and savory flavors, making these muffins the perfect breakfast option for any occasion.
Preheat the oven to 350°F (175°C) and lightly spray a 12-cup muffin tin with non-stick cooking spray, such as olive oil cooking spray.
In a large mixing bowl, crack in the eggs, add the milk and finely shredded sharp cheddar cheese. Season with a dash of salt and pepper. Whisk everything together until completely combined and smooth.
Take the slices of Greenridge Farm Caminito Ham and gently press them into each muffin cup, so that the ham slices form a cup shape. Make sure that the ham slices are covering the bottom and the sides of each muffin cup.
Next, distribute the roughly chopped spinach evenly among the 12 muffin cups, placing it on top of the ham slices.
Pour the egg mixture into each muffin cup until it reaches the top. The egg mixture should be evenly divided among the 12 cups.
Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the eggs are fully cooked and the muffins are golden brown. Check if the muffins are cooked by inserting a toothpick in the center of one muffin – if it comes out clean, the muffins are done.
Remove the muffin tin from the oven and let it cool for a few minutes. Then, use a knife or a spatula to gently remove each muffin from the muffin tin. Serve the muffins warm and enjoy!
