A decadent, and healthy (ish) Black Forest Sausage Pasta recipe with broccoli

INGREDIENTS

INSTRUCTIONS

  1. Step one

    Fill a large bowl with ice water and set aside, meanwhile, bring a large pot of water to boil. 

  2. Step Two

    Once boiling, add a generous amount of salt and add broccoli, cooking for 5-7 minutes until tender. Using tongs, immediately transfer broccoli to bowl of ice water to blanch (stop cooking). Leave in for 2-4 minutes. 

  3. Step Three

    Remove broccoli and pat dry with paper towel, chop into 2-inches pieces 

  4. Step Four

    In the same pot you cooked broccoli, cook pasta al dente. Cooking times vary for different types of pasta, so please refer to package for exact time. 

  5. Step Five

    Reserve 3/4 cup pasta water and set aside, then drain pasta. 

  6. Step Six

    In a large skillet over medium heat, add 1 tablespoon of olive oil and cook the chopped sausage (Greenridge Black Forest Sausage- click here to buy), until browned and crispy on all sides, about 4-5 minutes.

  7. Step Seven

    Add garlic and cook for about a minute, until fragrant. Add in broccoli, parmesan, cheese, followed by the reserved pasta water, pouring slowly while vigoursly stirring to avoid the cheese from clumping. Continue adding the reserved pasta water until there is a glossy sauce that sticks to the pasta. Season with salt, pepper and serve immediately.
