Description

This open-face roast beef sandwich requires minimal ingredients and makes for a delicious snack. If you like a little more spice, feel free to use spicy horseradish sauce. Easily customizable, these are great for a picnic or brunch appetizer.

INGREDIENTS

³⁄₄ lb Thinly sliced Roast Beef
¹⁄₃ cup Mild Horseradish Sauce
1 tbsp Major Grey Chutney (Chopped)
2 tsp Low-fat Milk
4 Slices Dark Rye Bread
¹⁄₂ Medium Cucumber, sliced thin
¹⁄₂ small Red onion, sliced thin
1 tbsp Chives, chopped

Instructions

For the Sauce

In a small bowl, combine sauce ingredients (horseradisch sauce, milk, and chutney)
Assembly

Spread one side of each bread slice with 2 teaspoons sauce. Top with equal amounts of cucumber, onion and deli roast beef. Spoon remaining sauce evenly over beef; sprinkle with chives.
